Gluten Free Jam was founded when owner Anne Miller’s daughter was diagnosed with celiac disease. Miller started gluten-free roasting at Corbett Coffee Factory in 2006, but by 2011, their space had outgrown them and they needed a new name to match the plant-based brand. Miller named the bakery after Greta and her mother, the daughters of gluten-free Gems.

GFG is located in the Lloyd District on NE Broadway and currently operates only through retail locations. They have a variety of sweet and savory items, including New York Cheesecake, Cinnamon Cream Cheese Coffee Cake, Giant Fluffy Cookies, Herb Parmesan, mouth-watering Broccoli Cheddar Quiche, and five types of donuts (Cinnamon Sugar is my favorite).

Petunia began selling at the farmers market in 2010, where owner and baker Lisa Clark sold her gluten-free vegan baked goods. She started her business partly out of a passion for baking and a need to be gluten and dairy free due to her intolerance to both. Capturing the taste of the city, Petunia quickly grew and expanded into Portland’s wholesale market. In 2014 she opened the store with her husband Jacob, whom she met as her first wholesale buyer. When I was on Halloween, I made a pumpkin cinnamon sugar donut that was soft and delicious with a melt-in-your-mouth outer layer, and a coconut caramel baby (Kupchak) cake with a perfect balance of caramel. , the coconut and salt was so good, I went back this weekend for a slice of their peach pie. (Reader, I said I didn’t care for the pie, but I made this slice in less than a minute. The filling is marion, balanced by sweet, juicy peach slices under the coconut streusel, and a raspberry and vegetable treat.)

Like many gluten-free people, Chris Gomke wasn’t satisfied with the options available to him, so he and his wife, Teresa Atkins, opened their own bakery in 2007. Expansion grew quickly, so they opened a store in the Clinton neighborhood in 2008 and have been gluten-free in Portland ever since.

The new Cascadia is truly something special. Everything they make is very close to their gluten-filled counterpart, and chewy cookies and donuts are baked to perfection, just as the gods intended. They also offer a large selection of gluten-free breads, including sandwich breads, baguettes, challah and hoagie rolls.

After years of suffering from an autoimmune disease that caused her stomach upset, Bosanich switched to a gluten-free diet, and the diet quickly alleviated her symptoms. After enrolling in La Cordon Bleu’s pastry program, she blew away the competition.
